Abstract
Potato enjoys a unique distinction among many root and tuber crops used as human food. It is considered as one of the major food crops, other being cereals. Potato is used for different purposes indifferent countries and about one half of the world production being used as human food In developing countries like India people are traditionally dependent upon cereals and are generally unaware of the nutritive value of potatoes. It is, therefore, very important to obtain an idea of the nutritional composition of potato for correct appreciation of its nutritive value.Downloads
